2. Key Highlights

Guests consistently praise several aspects of Château de Courban:

  • Gastronomic Restaurant: The Michelin-starred restaurant is frequently cited as a major highlight, with many guests stating it's a primary reason for their visit and offering "out of this world" food and outstanding service.
  • Nuxe Spa: The 984 sq ft Nuxe Spa, featuring a sauna, hot tub, and outdoor swimming pool, is a significant draw for those seeking relaxation and well-being.
  • Exceptional Service & Friendly Staff: The staff are consistently described as competent, extremely friendly, welcoming, helpful, and responsive.
  • Beautiful Setting & Design: The château itself, an 1837 manor house, boasts magnificent grounds, Italian-style gardens, and a "country chic" interior design that blends period romance with modern amenities.
  • Tranquil Location: Situated in a stunning national park, between Troyes, Dijon, and Chablis, the location offers a serene and peaceful environment.

The 24 individually decorated rooms at Château de Courban are designed with a "country chic" spirit, offering a relaxing and elegant holiday destination. They are described as comfortable, spacious, clean, and maintained to a very high standard. Rooms retain period romance while subtly incorporating contemporary luxury and modern amenities. Some rooms feature Italian showers, and all offer views of the garden, forest, or swimming pool, along with free Wi-Fi and air conditioning. Guests can choose from classic rooms, prestige rooms, or even a unique stay in a refurbished 16th-century dovecote.

4. Dining Experience

The dining experience at Château de Courban is a major draw, centered around its Michelin-starred gastronomic restaurant.

  • Restaurant Quality: The restaurant, often housed in a converted barn with a beamed ceiling and views of the Italian-style gardens, serves refined French cuisine that highlights local Burgundy ingredients. Chef Maxime Lesobre (and previously Nicolas Thomas and Miguel Marroquin) crafts delicate, seasonal dishes with an emphasis on flavor. Guests have lauded the exceptional quality of the food and the carefully selected wine pairings, particularly the selection of Champagnes and Burgundy labels. The pastry chef, Sae Hasegawa, is noted for creating less sweet, more ethereal desserts that incorporate surprising ingredients reflecting her origins, such as sesame or miso.
  • Breakfast: A delicious continental-style buffet breakfast is available for a surcharge, featuring fresh, high-quality ingredients including charcuterie, smoked salmon, eggs, local yogurts, homemade jams, tarts, and even Burgundy Crémant.

5. Service & Staff

The staff at Château de Courban consistently receive high praise for their hospitality. They are described as competent, extremely friendly, welcoming, helpful, responsive, and professional. Guests appreciate their attentiveness, with one reviewer noting that staff went out of their way to arrange coffee and a croissant when a full breakfast wasn't desired. The family-run nature of the hotel contributes to the warm and inviting atmosphere.

6. Location & Accessibility

Château de Courban is situated in the picturesque village of Courban, in the Côte-d'Or region of Upper Burgundy, offering an idyllic setting amidst rolling hills and lush vineyards. Its location is ideal for those seeking a tranquil escape, nestled within the beautiful "National Forest Park" and conveniently positioned between the renowned wine regions of Chablis and Champagne, and cities like Troyes and Dijon. The hotel is approximately 20 km from the A5 motorway (exit n°23 Colombey-les-Deux-Églises). Free private parking is available on site, and electric car charging stations are provided. While offering a peaceful countryside retreat, guests can also explore charming local villages and historic vineyards.

7. Value & Pricing

While specific room prices can vary, a 1-night stay for two adults was found to start from around $201.49 as of January 2026. The hotel offers various packages, such as a "Romantic Gastronomy and Spa weekend" which includes a choice of room, Champagne, the "Emotions Menus" dinner with drinks, breakfast, and spa treatments, starting from €345 per person. Given the Michelin Key selection, the Michelin-starred restaurant, and the comprehensive Nuxe Spa, guests generally perceive the experience to be well worth the cost, particularly for special occasions or a luxurious retreat.

8. Common Complaints

While overall sentiment is very positive, a few minor criticisms have been noted:

  • Restaurant Menu Inflexibility: One guest mentioned disliking the "inflexibility of the menu" at the restaurant.
  • Spa Availability/Communication: A guest reported asking about a spa slot and not receiving a return call.
  • No Elevators: The property does not have elevators, which could be a consideration for some guests.
  • Seasonal Pool: The outdoor pool is seasonal, typically open from July to August.
  • Limited Restaurant Menu and Service (isolated incident): One isolated review from August 2024 mentioned a very limited menu and "incredibly bad service" at the restaurant, including wine bottles brought already opened, leading them to leave. However, this appears to be an outlier compared to the overwhelmingly positive feedback on dining and service.

This was the 2nd stay at this amazing hotel. We had a fantastic room with a huge bathroom, everything was thought of. Our evening was exceptional, from Apero with stunning Canapés to our meal. The food was excellent, every course a ‘ taste experience’ & served by exceptional staff. How wonderful to have a ‘ cheese trolley’ - not found often nowadays. We picked a white Mercurey wine which we loved...

We had a truly lovely one night stay in this boutique hotel in a historic small chateau in a charming little village. Very welcoming and friendly staff. The rooms are big, the beds comfortable and bathrooms beautifully laid out.

Great small-ish sized hotel, that is dog friendly! Situated in a rural French village we have this stunning château, converted into a small-medium hotel with spa. We had a great time there. The staff speak fluent English, whilst I speak a tiny bit of French. The spa treatments were excellent and the restaurant was amazing! Would come back again. Many thanks!

To start with: hotel is quite difficult to enter no clear sign, we had the new room which is nice when traveling with dogs. Unfortunate the staff didn’t help (by themselves) at check in/out. Woman was nice, the man, probably the manager, was very rude. Staff is not trained properly, we came for dinner at 8.30 and received our main (the beef which was very tough to eat) around 12 at night. Also a f...

We had a pleasant stay. The room was on the small side but it had everything we needed including AC which was pleasant with the heat. Unfortunately we missed a minibar but not the worst thing to miss. The pool was extremely pleasant. The only reason for not giving the hotel 5 stars is because there is nothing else around and we were woken up by our upstairs neighbour at 4 am who was walking around...

We stayed here with our 4month old baby as a stop over on the way to the alps. The property and rooms were beautiful but what really was amazing was the restaurant! Not only was the food incredible, but when we brought our baby who wasn’t settling they were so accommodating in letting us have our final course in the room. On our journey back, we decided to stay again and once again they were reall...
